The most common roof to wall intersections involve either a gable roof with its ridge running perpendicular to the wall or a shed roof that slopes downward away from the wall. Lay a thick layer of cement on existing brick work then place the wall plate on this and get a good level.

Line up wall plate against existing joists and make a mark on the wall plate in line with the centre of the joists. Here is an attempt though maybe not a very good one to make the roof flashing serve also as a through the wall flashing with a tile roof.
